America is currently facing an outbreak of the parasite named as Cyclosporiasis. There has been more than 18,000 confirmed or suspected cases reported across 41 states and 308 hospitalizations. The parasite has been linked to shredded iceberg lettuce sourced from Taylor Farms de Mexico in central Mexico which is used by major fast food chains including Taco Bell.
The illness is caused by the parasite Cyclospora cayetanensis, which is spread through food or water contaminated with human feces. Symptoms include watery diarrhea, cramping, and fatigue, which can persist for weeks. The parasite typically takes 1–14 days to cause symptoms after ingestion.
